So making my lunch for tomorrow, I decided to make some lettuce wraps.... I got a recipe for cilantro mayo from the South Beach website.... but girls, what we have here is on the verge of full-blown Cafe RiĆ³-esque Cilantro-Lime Ranch! I imagine all it needs is a dash of dry ranch dressing seasoning (and a SMALLER clove of garlic than what I used...). And I'm totally allowed to have this! And so I HAVE to share!!
Ingredients
3⁄4 cup reduced-fat mayonnaise
3⁄4 cup loosely packed cilantro leaves
1 tablespoon fresh lime juice
1 teaspoon light soy sauce
1 small clove garlic
Instructions
Place the mayonnaise, cilantro, lime juice, soy sauce, and garlic in a blender or food processor. Blend until smooth.
Makes 3/4 cup. One serving is 1-2 tablespoons.
